Greek cooking is legendary, thanks to delicious Mediterranean flavors like garlic, lemon, oregano and olive oil. All of those healthy ingredients shine in this easy Greek lemon baked salmon recipe.

This simple Greek lemon salmon recipe is so moist and savory. Plus, it offers the health benefits of lemon and the health benefits of oregano, which combine to create that Greek flavor so many of us crave. Best of all, this nutritious salmon recipe is a great addition to a heart-healthy Mediterranean Diet!

Here are the six ingredients you need to make this gluten-free seafood dinner recipe: fresh salmon, extra virgin olive oil, lemon juice, red wine vinegar, oregano and minced garlic. You combine the ingredients then spread the sauce over the salmon in a baking dish. You then bake the low-sodium salmon for only about 15 minutes. So quick and easy, but incredibly tasty!

I served this succulent salmon with my easy Parmesan potato crisps for a low-calorie, high-protein meal. It also would be delicious served with rice, vegetables or any of your favorite side dishes.

Ingredients

  • 1 pound (16 ounces) fresh salmon filet
  • 1 1/2 tablespoons extra virgin olive oil
  • 3/4 tablespoon red wine vinegar
  • 1 tablespoon lemon juice (fresh is best)
  • 1 teaspoon minced garlic
  • 1 teaspoon dried oregano or fresh oregano
  • lemon slices, for garnish (optional)

  • I prefer to squeeze my own fresh lemon juice, but you can use bottled lemon juice in a pinch.
  • You can use fresh oregano or dried oregano.
  • Garnish with fresh lemon slices, if desired.
  • Store leftovers in an airtight container in the refrigerator. Reheat in the microwave.

Here's how to make it:

  1. Place the salmon filet in a casserole dish or baking pan (I lined mine with aluminum foil for easier cleanup). In a small mixing bowl or measuring cup, add the olive oil, red wine vinegar, lemon juice, minced garlic and oregano. Whisk to blend.
  2. Pour the sauce over the salmon. Season with salt and pepper, if desired.
  3. Bake the salmon at 375 degrees F for about 15 minutes, or until desired doneness. Salmon is done when it reaches 145 degrees F on a food thermometer.
  4. Remove from oven, garnish and serve with your favorite side dishes.
