The end of summer is always bittersweet. One of the things that I miss most when summer ends is all the fresh peaches. That's why I try to enjoy as many of the remaining fresh peaches I can find at my local farmers market or grocery store. Peaches are delicious and nutritious (check out the health benefits of peaches). A few of those ripe peaches got turned into this easy peach compote recipe.
This tender and juicy peach compote is so sweet and saucy. It tastes similar to peach pie – without all the work. To make this simple peach dessert recipe, you need only six ingredients and about 15 minutes. Here's your gluten-free list of ingredients: peaches, water, honey, cinnamon, vanilla extract and fresh lemon juice. You combine the ingredients in a saucepot and simmer until soft and saucy. So easy!
Serve this low-sodium peach compote recipe as a snack any time of day, for dessert with a scoop of vanilla ice cream or as a side dish for many a dinner. I serve them on top of pancakes for a sweet breakfast or weekend brunch treat. So easy and delicious!

Ingredients
- 3 large ripe peaches, chopped (about 3 cups)
- 2 tablespoons water
- 3 tablespoons honey
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 2 tablespoons fresh lemon juice
Recipe Notes
- I used fresh peaches, but you can use frozen peaches instead.
- I left the skin on the peaches, but you can peel them if you prefer.
- You can substitute maple syrup for the honey, if desired.
- I prefer to squeeze my own fresh lemon juice, but you can use bottled in a pinch.
- Store leftovers in an airtight container in the refrigerator. Reheat in the microwave.
Here's how to make it:
- In a saucepot over medium heat, add all the ingredients and stir to combine. Bring to a boil.
- Reduce heat and simmer, stirring occasionally, until peaches are soft and saucy.
- Remove from heat. Serve or store in refrigerator until ready to serve. They taste even better the next day!
