Fall is my favorite season. But, there are some good things about summer, like zucchini fresh from the garden so you can make zucchini bread! This shortcut recipe for zucchini bread is so quick and easy because it starts with a box of cake mix. Don't you love that?
To make this shortcut zucchini bread recipe you only need six simple ingredients. Here is your short shopping list: a box of yellow cake mix, fresh zucchini (check out the health benefits of zucchini), ground cinnamon, milk, vegetable oil and eggs. The ingredients are mixed together, spread into two loaf pans and baked until golden.
Serve this moist zucchini bread for dessert after dinner or as a sweet snack during the day. Sometimes I'll serve a slice for breakfast or with brunch. Why not? Happy baking!

Ingredients
- 15 ounces (1 box) yellow cake mix
- 2 medium zucchini, shredded (about 2 cups)
- 1 tablespoon ground cinnamon
- 1/4 cup milk (sometimes I'll use evaporated milk)
- 1/2 cup vegetable oil
- 3 eggs
Here's how to make it:
- Stir together the cake mix, ground cinnamon, milk, vegetable oil and eggs. (If you don't have milk, you could use water.)
- Fold in the zucchini. (Dry the zucchini with paper towels to remove excess moisture.)
- Spread the batter into two loaf pans that have been sprayed with nonstick cooking spray or lined parchment paper.
- Bake in a preheated 350-degree F oven for about 45 minutes, or until a toothpick comes out clean. Cool for 10 minutes in the pans before removing to cool completely. Store the zucchini bread in an airtight container on the counter.
