Summer peaches remind me of my childhood. We used to pick peaches from the orchards near our town and use them in so many different ways, and we never tired of their sweet juicy flavor. I love this healthy baked peach oatmeal recipe because it feeds a crowd and tastes delicious!
All you'll need for this easy baked oatmeal recipe is eggs, milk, brown sugar, coconut oil, an orange or orange juice, vanilla, cinnamon, nutmeg, baking powder, salt, oats and sweet summer peaches. The ingredients are mixed together and baked about 40 minutes or until firm. One bite of this peachy oatmeal and you'll have a smile ear to ear.
Serve this easy oatmeal recipe for breakfast or brunch. You could even eat it for dessert with a scoop of vanilla ice cream.

Ingredients
- 3 eggs
- 1 1/2 cups almond milk (or milk of choice)
- 1/2 cup brown sugar
- 2 tablespoons melted coconut oil
- 1 tablespoon orange zest (optional)
- 2 tablespoons orange juice or the juice from 1 orange
- 2 teaspoons vanilla extract
- 2 teaspoons cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 1/2 cups rolled oats (not instant)
- 3 cups sliced or cubed peaches

- Fresh peaches are best but you could use frozen peaches.
- Add chopped nuts for a little crunch.
Here's how to make it:
- Mix eggs, milk, brown sugar, coconut oil, orange juice, orange zest, baking powder, cinnamon, nutmeg and vanilla in a bowl. Pour into a greased 11x7-inch baking dish.
- Fold in oatmeal and peaches.
- Bake in a preheated 375-degree oven for about 40 minutes until mixture is firm.
- Cool for a few minutes and serve warm or at room temperature.
