I love making fresh bruschetta when summer tomatoes arrive with their red and ripe goodness. But sometimes I don’t have the tomatoes in the house (aka winter) or I just don’t have the time to put it together. Enter this wonderful shortcut bruschetta dip recipe that uses store-bought bruschetta on top of whipped cream cheese. Oh, my! And with the Olympics starting, I thought an Italian dip would be the perfect high-protein appetizer or snack while we watch the winter games. This easy, creamy dip and spread is wonderful served like bruschetta, and also great with crackers or even on toast for breakfast or for an easy lunch. The Italian-inspired recipe is the perfect easy side dish or delicious appetizer to bring to any gathering!
Tip: If you can't find store-bought bruschetta topping, make your own by mixing together fresh chopped tomatoes, sea salt, minced garlic, olive oil, white balsamic vinegar and fresh basil. Or just fresh tomatoes, garlic and basil.
You only need two ingredients to make this shortcut shortcut recipe, but if you have the time to add the fresh basil and balsamic glaze, it makes it extra special. Here are the ingredients to gather for this 10-minute gluten-free bruschetta dip: cream cheese, ready-made bruschetta and optional fresh basil and balsamic glaze. Don’t forget some fresh bread or crispy crackers to serve it on!

Ingredients
- 16 ounces cream cheese, softened
- 15 ounces (1 container) refrigerated bruschetta topping
Here's how to make it:
- About 1 to 1 1/2 hours before starting the recipe, take out your cream cheese and place it in a mixing bowl to soften. When the cream cheese is soft, use a mixer to whip it up to make it nice and spreadable, about 1 to 2 minutes. (If you don’t have time to soften the cream cheese or you don’t have a mixer, you can use two packages of whipped cream cheese set out for 10 to 20 minutes. It won’t be as fluffy but it will still work!)
- Spread the cream cheese in the bottom of a casserole dish or pie plate.
- Drain the bruschetta in a fine mesh strainer or use a slotted spoon to remove as much moisture as possible.
- Spread the bruschetta on top of the cream cheese. If you like, sprinkle with basil and drizzle the mixture with balsamic glaze. Serve with bread or crackers and enjoy! (To fancy up the dip, top with fresh basil leaves and drizzle with balsamic glaze.)
