Recipe Notes
- You can accelerate the process by turning the oven up to 325 to 350 degrees F about an hour into the cooking. You don’t want to start on the higher heat because the tomatoes will burst.
- Store the roasted tomatoes in an airtight container or mason jar in the fridge.
Here's how to make it:
- Line a large baking sheet with parchment paper and preheat the oven to 250 degrees F. Put the tomatoes, cut side up, onto the parchment and drizzle with olive oil. Add a few pinches of sea salt and a few grounds of fresh black pepper. Move the tomatoes around to get the olive oil on them.
- Place into the oven and bake for 2 to 3 hours until they are nice and cooked around the edges.
- Top with optional fresh thyme, if desired.
