I'm really trying to do easy and fast with food these days. That's just one of the reasons I love this 10-minute pancake recipe. The batter mixes up quickly in one bowl, which makes cleanup easier, too. These simple pancakes are fluffy and absolutely delicious. You don't need to spend a lot of time to make these pancakes for yourself, friends or family.
This pancake batter is wonderful plain or throw some chocolate chips on top while cooking. Serve the pancakes with maple syrup, pancake syrup or whatever you like to embellish your pancakes with. We love fresh applesauce, whipped cream and fruit, just to name a few!
To make these pancakes for breakfast or brunch you will need all-purpose flour, granulated sugar, baking powder, salt, whole milk, an egg, vanilla extract and butter. If you're jazzing it up, grab some chocolate chips!
No one will be late for breakfast when you serve a platter of these fluffy pancakes. Add a side of bacon, breakfast sausage, hash browns or fresh fruit.

Ingredients
- 1 1/2 cups all-purpose flour
- 1 tablespoon granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon salt (or to taste)
- 1 1/3 cup whole milk
- 1 egg
- 1 teaspoon pure vanilla extract
- 2 tablespoons butter, melted, plus a bit more for pan
- chocolate chips (optional)
Recipe Notes
- Keep the pancakes warm while make more by placing them in a 200-degree F oven.
- Store any leftover pancakes in the fridge in an airtight container. Reheat in the microwave.
- Make these pancakes gluten-free by using gluten-free flour.
Here's how to make it:
- Place a large skillet on the stove top on medium heat. In a medium bowl combine dry ingredients.
- Add the wet ingredients, including the melted butter, blending well with a whisk, fork or spoon.
- Grease the skillet with butter, nonstick cooking spray or oil. Spoon a few tablespoons of batter to make the pancakes.
- Add chocolate chips, if desired, to the top of the pancake dough. Let the pancakes cook for 2 to 3 minutes per side.
- Flip the pancakes to the other side. Be a bit patient with the first side as this dough is thick and takes a bit to cook through.
- Place the pancakes on a plate and top with syrup or your other favorite toppings.
