Here's a simple recipe for roasted garlic cherry tomatoes that goes well with any protein or tossed with pasta or in a salad or grain bowl. Be sure to use those fresh herbs from your herb garden. This roasted garlic cherry tomato recipe begs for that oregano, basil, parsley, rosemary and thyme.
All you need to make these baked cherry tomatoes is fresh cherry tomatoes, garlic, olive oil and fresh herbs. The ingredients are baked in the oven until the tomatoes are soft and succulent. The smell of these tomatoes will make your house smell like summer! Plus you get the health benefits of tomatoes, the health benefits of olive oil and the health benefits of garlic. The baked tomatoes are also a delicious part of the heart-healthy Mediterranean Diet.

Ingredients
- 3 - 4 cups cherry tomatoes
- 6 cloves garlic, minced
- 3 tablespoons olive oil
Here's how to make it:
- Combine the tomatoes, garlic and olive oil in a bowl. Season with salt and pepper.
- Pour the tomatoes onto a baking sheet. (Top with chopped fresh herbs, if desired. Use all the colors of cherry tomatoes you can find, red, orange, yellow, etc.,) for a colorful dish.)
- Bake in a preheated 375-degree F oven for about 20 to 25 minutes. Use immediately or store the tomatoes in the fridge in an airtight container.
