Grandma's Shortcut Spinach Soufflé Casserole Recipe (6 Ingredients)

Grandma’s way is usually a simpler and easier way to do things, and this recipe is no exception. This light and fluffy spinach "soufflé" recipe is a wonderful side dish and might just get you and your family to love spinach. This shortcut recipe uses very few ingredients and is a wonderful accompaniment to dinner. This is the kind of recipe grandma would have cooked in that vintage CorningWare casserole dish! 

To make this spinach recipe that is grandma-approved you will need cottage cheese (read about the health benefits of cottage cheese), eggs, frozen chopped spinach, salt, ground nutmeg and cheddar cheese. All the ingredients (except one-fourth of the cheese) is baked in a casserole dish for about 45 minutes. Top with the remaining cheese and serve (grandma didn't put it back into the oven to melt!). 

Serve this budget-friendly spinach casserole as a side dish with your favorite dinners. It's delicious with chickenporkbeef or seafood

  • 2 cups cottage cheese
  • 3 eggs, beaten
  • 30 ounces (3 bags) chopped frozen spinach, thawed and squeezed dry
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground nutmeg
  • 1 1/2 cups grated cheddar cheese (divided)

  • You could use any type of cheese you like for this recipe. Monterey Jack, provolone, gruyere, Swiss, fontina or your favorite cheese blend would be delicious.
  • Store any leftovers covered in the fridge for up to four days.

Here's how to make it: 

  1. In a mixing bowl, stir together the cottage cheese, eggs, spinach, salt and nutmeg.
  2. Add 3/4 of the grated cheese. Stir to combine. Spread the mixture in a greased 8x8-inch casserole dish.
  3. Bake in a preheated 350-degree F oven for about 45 minutes. Remove and top with remaining cheese.
  4. Serve hot.
