This easy artichoke and spinach casserole recipe takes no time to make and even kids love it. It is one of my all-time favorite recipes, and I started making in way back in the '90s. This casserole recipe has definitely stood the test of time!
To make this creamy vegetable casserole you will need just six simple ingredients. Here is your short shopping list: cream cheese, butter, milk, a jar of marinated artichoke hearts, frozen spinach and Parmesan cheese. The ingredients are mixed together, spread into a baking dish and baked for about 30 minutes.

Ingredients
- 6 ounces cream cheese, softened
- 2 tablespoons butter, softened
- 1/4 cup milk
- 7.5 ounces (1 jar) marinated artichokes, drained and cut into smaller pieces
- 20 ounces (2 packages) frozen chopped spinach, thawed and squeezed dry
- 3 tablespoons freshly grated Parmesan cheese
Recipe Notes
- You can use fresh spinach if you prefer. Cook it until wilted and then squeeze dry before adding it to the casserole.
- You could use regular canned artichokes, but marinated artichokes add so much flavor to the dish.
- I like to put my spinach into a mesh strainer and press over the sink to remove excess moisture.
- Be sure to bring the cream cheese to room temperature before preparing the recipe.
- If your baking dish does not have a lid, cover with aluminum foil.
Here's how to make it:
1. Combine the butter, cream cheese and milk in a bowl. Mix well and season with salt and pepper.
2. Fold in the spinach and artichokes. Pour into a baking dish.
3. Top with the grated Parmesan cheese.
4. Cover and bake in a preheated 350-degree F oven for 20 to 25 minutes. Cover and bake about 10 minutes more.
