We love chicken salad for lunch and dinner year-round. Spruce up chicken salad with an Indian twist! This creamy curry chicken salad recipe uses pre-cooked rotisserie chicken from the grocery store. The high-protein recipe is quick and easy using the rotisserie chicken, or you could use leftover chicken. (Check out the health benefits of protein.)

Serve this easy chicken salad recipe on bread with a bed of lettuce or on top of a green salad with light salad dressing for dinner or lunch.

Ingredients

1 rotisserie chicken
regular mayonnaise or low-fat mayonnaise
30 seedless green or red grapes, cut in half or chopped
2 teaspoons curry powder

Here’s how you make it:

Remove the chicken from the bones and chop or shred.
Stir in desired amount of mayonnaise.
Add grapes and curry powder. Stir gently to combine. Serve as desired. Store the chicken salad in an airtight container in the fridge.
