Recipe Notes

  • I used semisweet chocolate chips, but dark chocolate or milk chocolate will also work. Use your favorite!
  • Store the brownies in an airtight container to keep them fresh.

Here's how to make it:

  1. Preheat the oven to 350 degrees F. Place a piece of parchment into an 8x8-inch baking pan. Don't worry if it doesn't sit inside because the batter will weigh it down. Set to the side.
  2. Put the chocolate chips in a microwave-safe bowl. Microwave in 20- to 30-second intervals until they are melted and smooth. Let your chocolate sit for 10 to 15 minutes to cool or the eggs will start cooking before they are in the oven and ruin the brownies. You can't let the chocolate sit too long or it will start to harden, so make sure to pay attention to this step and make sure it cools down but doesn't get hard. I use a spatula to make sure the chocolate is still stirring nicely.
  3. When the chocolate has cooled for at least 10 minutes, break the eggs into a medium mixing bowl.
  4. Whip with an electric mixer on medium/low until they are well blended, about 4 to 5 minutes. Mixing the eggs well makes your brownies more light and fluffy, so don't skimp on the time. If you don't have an electric mixer, use a wire whisk and whisk well for 4 to 5 minutes or longer if you can!
  5. Add the chocolate to the blended eggs.
  6. Stir well until the eggs are completely incorporated into the chocolate.
  7. Pour into the parchment paper-lined pan.
  8. Bake for 25 to 35 minutes, or until a toothpick inserted comes out with crumbs, not wet. Make sure not to overcook!
  9. Remove to a rack to cool for at least 10 minutes before cutting and enjoying this high-protein chocolate treat!
