Crave-Worthy Cacio e Pepe Cheese Crisps Recipe (3 Ingredients)

It's no secret that cacio e pepe is one of my favorite Italian dishes. It still amazes me that I was lucky enough to eat my first plate of cacio e pepe in Rome, where it was invented. The flavors of the "cheese and pepper" pasta dish are simple, yet sheer perfection. Over the years, I've been experimenting with other dishes using those flavors like cacio e pepe french fries, cacio e pepe cabbage wedges and cacio e pepe lasagna. My latest delicious discovery are these craveable cacio e pepe cheese crisps!

These low-sodium crunchy cheese crisps are cheesy, flavorful and full of black pepper. You will not be able to stop munching on these gluten-free crispy snacks! To make this cacio e pepe crisps recipe you need just three ingredients. Here is your short shopping list: grated Parmesan cheese, grated Pecorino Romano cheese and cracked black pepper. The Italian-inspired crisps cook up in a nonstick skillet in just minutes.

You can just eat these as a snack whenever the craving hits or serve them as an appetizer. I also like to put them on my salads instead of croutons. If you like these cheese crisps, try my two-ingredient thyme crisps.

Ingredients

  • grated Parmesan cheese (not the powder)
  • grated Pecorino Romano (not the powder)
  • freshly cracked black pepper

Recipe Notes

  • Pecorino Romano is a salty, hard Italian cheese that's most often made with sheep's milk. It's got a sharper taste and is saltier than Parmesan cheese.
  • Be sure to use a nonstick skillet for this recipe. I've tried it in a cast iron skillet but they stuck and didn't hold their round shape when flipping.
  • Store the cheese crisps in an airtight container on the counter.

Here's how to make it: 

  1. Mix equal amounts of Parmesan and Pecorino Romano together. Put about 1 tablespoon into a mound in a hot nonstick skillet and spread out. Put as many as you can into the pan. Top with lots of cracked black pepper.
  2. Cook over medium-high heat until the bottom is golden and the cheese is firming up.
  3. Use a spatula to carefully flip over the crisps. Cook until the other side is golden.
  4. Remove from the pan onto a plate. Top with more black pepper, if desired. Let them cool slightly. They will crisp up as they cool.
