If you're not yet sold on salmon, this mouth-watering salmon recipe just may change your mind. Salmon recipes are a weekly staple for dinner in my house because salmon is so nutritious, delicious and simple to prepare and cook (just check out all the health benefits of salmon).

This honey lemon Dijon baked salmon recipe is one of my new favorite salmon recipes. The sweetness of honey combines with the tanginess of fresh lemon juice and the flavor of Dijon mustard to create an irresistibly moist and savory seafood dinner that will make your mouth water. Plus, it's ready in only about 20 minutes. Wow!

Here's your simple shopping list for this delicious dinner recipe: fresh salmon, honey, fresh lemon juice and Dijon mustard. That's it! You prepare the sauce then spoon it over the salmon in a baking dish. You bake the salmon for about 15 minutes then serve it up. So easy!

I served this gluten-free salmon with a side of vegetables for a high-protein, low-sodium, low-calorie, low-carb meal. But, it also would be delicious served over rice or quinoa, to soak up the sauce. Simple enough to enjoy it for dinner any night of the week!

Ingredients

  • 1 pound (16 ounces) fresh salmon filet
  • 2 tablespoons honey
  • 2 tablespoons fresh lemon juice
  • 1 1/2 tablespoons Dijon mustard

  • If you don't have fresh lemon juice, you can use bottled in a pinch.
  • Feel free to use more or less Dijon mustard, depending on your tastes.
  • Store leftovers in an airtight container in the refrigerator. Reheat in the microwave.

Here's how to make it:

  1. Place the salmon filet in a casserole dish or baking pan (I lined mine with aluminum foil for easier cleanup). Season with salt and pepper, if desired.
  2. In a small mixing bowl or measuring cup, add the honey, lemon juice and mustard. Stir to combine, creating the sauce.
  3. Pour the sauce over the salmon, ensuring the salmon is covered in the sauce.
  4. Bake the salmon at 375 degrees F for about 15 minutes, or until desired doneness. Salmon is done when it reaches 145 degrees F on a food thermometer.
  5. Remove from oven and serve with your favorite side dishes.
