Air Fryer Spanakopita Rolls Recipe: Crisp Greek Feta & Spinach Rolls In Under 30 Minutes

I'm a huge fan of spinach and feta, and spanakopita is one of my favorite Greek recipes. This air fryer recipe is a wonderful shortcut of the traditional spanakopita, without any reduction of taste! Pop these spinach and feta rolls in your air fryer and 15 minutes later these crispy treats will be a new favorite appetizer, light lunch or dinner.

To make this savory Greek recipe you will need just a few ingredients. Here is your shopping list so you can make these rolls tonight: phyllo dough, fresh baby spinach, sea salt, black pepper, fresh parsley, fresh dill, fresh mint leaves, green onions, feta cheese, an egg, dried oregano, butter or olive oil and optional everything bagel seasoning. The filling is mixed together, put onto the phyllo dough, wrapped up and air fried until golden and crispy.

Serve these Greek spanakopita rolls as a side dish for dinner, as an appetizer or snack, or as a light vegetarian lunch or dinner. It's another reason to love your air fryer!

Ingredients

  • 1 box phyllo, thawed if frozen
  • 6 ounces fresh baby spinach leaves
  • 1 teaspoon sea salt
  • 1/2 cup fresh parsley, finely chopped
  • 1/2 cup fresh dill, finely chopped
  • 4 green onions, finely chopped
  • 1 tablespoon fresh mint leaves, finely chopped
  • 7 ounces feta cheese, crumbled
  • 1 large egg
  • 1 teaspoon dried oregano
  • 4 tablespoons melted butter, ghee or olive oil (more if needed)
  • 2 tablespoons everything bagel seasoning (optional)

  • Be sure to squeeze all of the water out of the spinach. If you don't, you'll have soggy rolls.
  • Garlic lovers could add some chopped fresh garlic to the filling.

Here's how to make it: 

  1. To make the spinach filling, put the chopped spinach into a mixing bowl, Sprinkle with salt. Mix together and set aside.
  2. Add the chopped parsley, dill, green onions and mint leaves to a mixing bowl.
  3. Blot the spinach on a clean kitchen cloth or paper towel to remove any excess moisture.
  4. Add the spinach to the herbs along with the egg, feta and oregano.
  5. Stir well to combine.
  6. To make the rolls, open the thawed phyllo dough and remove half of the dough. With the dough unrolled, cut the stack in half. Keep the unused dough from getting dry by covering with a damp kitchen cloth. Preheat your air fryer to 350 degrees F for 3 minutes. Use 2 to 3 slices of phyllo, spraying oil or brushing butter on each piece before stacking the next. Then place about 2 tablespoons of filling and start rolling the dough, folding over the sides as you go. Spray or brush the roll with butter, sprinkle with bagel seasoning and set in your air fryer. Continue the process until the filling is gone.
  7. Bake in the air fryer for 15 minutes on 350 degrees F turning them over halfway through. The rolls will be golden brown. Cool on a wire rack while you finish cooking all the rolls. Don't cover them or stack them on each other or they will lose their crispy edges. Serve warm or at room temperature and enjoy!
