Poor Man's Garlic Bread Recipe: Mom's Favorite 5-Minute Side Dish

No, we weren't poor. But my mom used to call this the poor man's way to make garlic bread. She didn't melt butter with fresh garlic and brush it onto baguette slices like I sometimes do. There was no fresh garlic involved in the garlic bread I grew up eating – but it was one of my favorite things, and still is.

This easy garlic bread recipe is on the table in less than five minutes. The ingredient list, as you guessed, is short, sweet and budget-friendly. Here is your shopping list: bread, garlic powder, parsley flakes and butter. Mom always had the ingredients on hand for this quick bread side dish. She would smear the bread with butter, sprinkle with the garlic powder for flavor, the parsley flakes for color and then broil until hot, crisp and golden.

This garlic bread is the perfect side dish for spaghetti and meatballs, pasta casseroles, lasagna, fried chicken, steak and gravy or whatever dinner needs something flavorful on the side. This garlic toast finds its way onto my plate quite often. If this is "poor man's," then take my money.

  • Sometime Mom would make this using leftover hotdog buns.
  • The parsley flakes are simply for color. You can leave them off and it'll taste just as good.
  • Store any leftovers in an airtight container in the fridge. Reheat quickly under the broiler or even in a cast iron skillet.

Here's how to make it: 

  1. Put the buns or bread slices onto a broiler pan or baking sheet.
  2. Spread each slice with butter, then sprinkle with garlic powder and parsley flakes.
  3. Broil until the butter melts and the top turns light brown. Do not walk away! It can be perfect one minute and burnt the next.
  4. Remove from the baking sheet and serve hot.
