Sub In a Tub Recipe: This Low-Carb Sandwich Salad Recipe Is Fun to Say & Eat

For me, sandwiches should be a food group. There's nothing like a good BLT, club sandwich, ham and cheese sandwich or submarine sandwich from one of my favorite sandwich shops. When a recipe for a breadless sub sandwich (aka salad) came through my news feed, I added all the ingredients needed to my shopping list ASAP. What a fun idea, especially when you're trying to cut out some carbs and lose a few pounds.

This keto-friendly sub in a tub recipe is not only fun to say (you smiled when you read it, didn't you?) but is also a fresh and healthy lunch or meal-prep idea. All you need are your favorite sub sandwich ingredients to make this for lunch or dinner right now. I put ham, turkey, provolone cheese, iceberg lettuce, tomatoes, red onion, bread and butter pickles, a hot pepper mix from Potbelly sandwich shop, and dried Italian seasoning, red wine vinegar and olive oil like they do at Jersey Mike's. The result was a tasty and filling salad that tastes like a cross between two of my favorite sandwiches!

Make a gluten-free sub in a tub and pack it for lunch at work or serve them at home for dinner. Don't just stop with the ingredients I used! You could add avocado, olive salad, cucumbers, fresh baby spinach, sundried tomatoes or anything you like on your sub sandwiches. Don't limit yourself to the meats either. Pepperoni, capicola, prosciutto, roast beef, corned beef and salami would be delicious on this salad recipe.

Recipe Notes

  • You don't have to get fancy and roll up the meat and cheese. You could simple chop it up and put it on top.
  • If packing for lunch, pop the top on the container and store in the fridge.
  • If you don't like iceberg lettuce, use butter lettuce, green leaf or red leaf lettuce. A spring mix would be delicious, too. Iceberg, however, is the typical lettuce of choice at sandwich shops.

Here's how to make it: 

  1. Put the shredded lettuce, tomatoes and red onions on the bottom of a plastic meal-prep container or storage container.
  2. Take slices of the ham and turkey and lay them on top of the cheese slices. Roll up and cut in half. Place on one side of the container. On the other side add the pickles and peppers and any other ingredients you want to add.
  3. Drizzle with red wine vinegar and olive oil. Sprinkle the dried Italian seasoning over all the ingredients. Enjoy!
