Reba McEntire's BLT Sandwich Recipe With Creamy Bacon Aioli

Who's enjoying watching Reba McEntire on The Voice? I know I am. Did you know the country legend has a restaurant in Oklahoma called Reba's Place? I didn't either. The southern restaurant serves comfort food like Nashville hot chicken dip, fried pickles, chicken fried steak and fried catfish – and a BLT sandwich. Reba shared her BLT recipe with People magazine, and it's off the charts!

The BLT at Reba's Places has eight (eight!) slices of bacon and a homemade garlic aioli. BLTs are one of my favorite sandwiches, so I had to try it. To make Reba's BLT sandwich recipe you will need a head of garlic, olive oil, tomato paste, an egg yolk, canola oil, thick-cut bacon, fresh basil, whole-grain bread, lettuce and tomato.

Is this a healthy sandwich? Not really, but I like to say everything in moderation. Serve this bacon sandwich for lunch or dinner (yes, it's hearty enough for dinner). Add a side salad or some french fries or tater tots and you've got a sandwich you won't soon forget. Thanks, Reba.

Ingredients

  • 1 garlic head, peeled
  • 1 cup extra-virgin olive oil
  • 2 tablespoons tomato paste
  • 1 large egg yolk, at room temperature
  • 1/4 cup plus 2 tablespoons canola oil
  • 9 slices crisp cooked thick-cut bacon (divided)
  • 1/4 cup basil leaves, chopped
  • 4 slices whole-grain bread, toasted
  • green leaf lettuce 
  • 1 heirloom tomato, sliced

Recipe Notes

  • Reba uses applewood smoked bacon.
  • To reduce some of the fat, sodium and calories, reduce the number of slices of bacon on the sandwich or use turkey bacon.
  • If the aioli is too thick, add a little water.

Here's how to make it: 

  1. Put the garlic and olive oil into a small baking dish. Make sure the garlic is completely covered with the oil. Cover and bake in a preheated 250-degree F oven for 1 1/2 hours. Remove and let the garlic cool. 
  2. Take three of the roasted garlic cloves and put them into a food processor or blender. Add the tomato paste and egg yolk. Pulse until smooth. With the food processor running, drizzle in the canola oil and 6 tablespoons of garlic oil from the roasted garlic. Process until it looks like mayonnaise. Season with salt and pepper, to taste. 
  3. Chop one slice of the bacon and add it to the aioli along with the basil. Season with black pepper, if desired. Stir well and set aside.
  4. Spread each slice of bread with some of the aioli. Add the remaining bacon, lettuce and tomatoes.
