Recipe Notes

  • For even more flavor, toast the sunflower, pumpkin, flax and sesame seeds in a dry skillet until fragrant.
  • Store the bread in an airtight container on the counter.

Here's how to make it:

  1. Stir together the pumpkin seeds, sunflower seeds, flax seeds and sesame seeds in a mixing bowl. Remove about 2 tablespoons and set aside for the topping. Add the flour, baking powder, baking soda and salt. Whisk to combine.
  2. In another bowl, whisk the eggs to blend. Add the buttermilk, rolled oats, oil and honey or maple syrup. Whisk to combine.
  3. Add the dry ingredients to the wet ingredients until combined. Spread the batter into a 9x5-inch loaf pan that has been sprayed with nonstick cooking spray. Sprinkle with the reserved seeds.
  4. Bake in a preheated 350-degree F oven until golden and a toothpick comes out clean, about 45 to 55 minutes (ovens vary). Remove and cool about 20 minutes in the pan before removing to cool completely.

There truly is nothing better than the aroma of fresh homemade bread baking in the oven. I can almost smell this loaf baking already!

Love seeds in bread. They just add a lot to the flavor and texture.

I made this last night--very good! I did modify it slightly--I left out the salt, and used sodium-free baking powder instead of the regular baking powder and baking soda. I used soy milk to make buttermilk (by adding lemon juice), and I didn't have flax seeds, so I subbed chia seeds. Made for a tasty breakfast toast this morning with almond butter!

That sounds delicious, Melissa Vickers ! Thank you for sharing your modifications and so glad you enjoyed this recipe. It reminds me a bit of my favorite bread recipe, shared by Jan Mostrom : food: The Best Gluten-free Bread Recipe (You'll Never Buy Frozen GF Bread Again) It's SO GOOD!!!
