Sheet Pan Italian Caprese Pizza Recipe Is Fresh, Fast & Flavorful (20 Minutes)

I’m all about an easy meal or appetizer, and this sheet pan caprese pizza recipe hits the spot. This easy pizza recipe comes together in about 25 minutes and, it’s so good, you might just want to make two!

To make this quick and easy sheet pan Caprese pizza, you will need just a few simple and fresh ingredients. Here is your shopping list: pizza dough, olive oil, salt, black pepper, fresh mozzarella cheese, baby heirloom tomatoes (see Recipe Notes), fresh basil and optional balsamic vinegar for drizzling. The pizza starts with a prepared pizza dough, so the prep is minimal.

Serve this vegetarian pizza for lunch or an easy dinner with your favorite side dishes (or even as an appetizer). I like to add a fresh spring salad on the side with balsamic vinaigrette.

Ingredients

  • 1 pound fresh prepared pizza dough

  • 1 tablespoon olive oil
  • 3/4 teaspoon kosher salt (divided)
  • 1/2 teaspoon black pepper (divided)
  • 8 ounces fresh mozzarella cheese, thinly sliced or grated

  • 2 cups baby heirloom tomatoes, whole or halved

  • 1/2 cup fresh basil leaves, loosely packed
  • 2 tablespoons balsamic glaze or good balsamic vinegar (optional)

  • I like my basil cooked, but you can keep all the basil to top the pizza after the pizza cooks.
  • If you want to use balsamic vinegar instead of the thicker, sweeter balsamic glaze, make sure it’s a really good aged balsamic. A good balsamic vinegar is very much worth the investment!
  • If you can't find baby heirloom tomatoes, use grape or cherry tomatoes.

Here's how to make it:

  1. Place a large baking sheet in the oven and preheat oven to 450 degrees F. On a sheet of parchment paper, roll or stretch your pizza dough to about 15x10 inches. With clean hands or a brush, drizzle the olive oil on the dough and spread it around. Sprinkle half the salt and pepper over the oil.
  2. Place the parchment with the dough on the hot cookie sheet and bake for about 10 minutes and the crust begins to brown.
  3. Remove crust and top with cheese, tomatoes and half the basil. Cook for an additional 2 minutes or until the cheese has melted.
  4. Remove from oven and top with additional fresh basil and the rest of the salt and pepper.
  5. If desired, drizzle with glaze or a good balsamic and serve warm.
