Easy Black Bean & Sausage Pasta Casserole Recipe Is Warm & Inviting

Our lovely British friends introduced us to this sausage and black bean pasta casserole recipe and we loved it. This warm pasta casserole is so good and easy. You can easily adapt this delicious baked sausage and pasta recipe to be vegetarian. Just omit the sausage or use a meat-free substitute. You could even ground turkey or chicken. You won’t be disappointed!

To make this make this quick black bean and pasta bake you will need farfalle or your favorite pasta, olive oil, ground sausage, red onions, sweet peppers, cumin, coriander, paprika, flour, fresh or canned tomatoes, black beans, bouillon cubes, cheddar cheese, fresh cilantro and crushed red pepper flakes. The pepper flakes are optional, but do add a nice back note of spice.

Serve this easy casserole for dinner with your favorite side dishes.

Ingredients

  • 1/2 pound farfalle pasta (see Recipe Notes)
  • olive oil
  • 1 pound ground sausage 
  • 2 red onions, diced (reserve 1/4 cup for garnish)
  • 4 cloves garlic, minced
  • 2 sweet peppers (red, orange or yellow), cut into bite-sized pieces
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons ground paprika
  • 1 teaspoon flour
  • 2 cups fresh tomatoes or 2 cans (15.5 ounces each) chopped tomatoes
  • 2 cans (15 ounces each) black beans, rinsed drained
  • bouillon cubes (chicken or vegetable)
  • 3/4 - 1 cup grated cheddar cheese
  • 1 large handful fresh chopped cilantro, for garnish (optional)
  • crushed red pepper flakes

Recipe Notes

  • You can replace sausage with any ground meat, tofu or leave it out.
  • Do not overcook the pasta. You do not want it mushy.
  • Use whatever short pasta you like for this recipe.

Here's how to make it: 

  1. Cook the farfalle according to package directions for al dente, about 5 minutes. Drain and reserve 1 cup of the pasta water. 
  2. Heat a heavy oven-safe skillet on the stovetop on high heat with a drizzle of olive oil. Add your sausage and cook breaking it up as it cooks, about 3 minutes.
  3. Once meat has begun to cook add the red onion (except for the 1/4 cup reserve), the garlic and peppers and a pinch of salt. Cook for 4 to 5 minutes until the onions are getting soft. Add ground cumin, paprika and coriander and 1 teaspoon flour and stir and cook for about 1 minute.
  4. Add the drained black beans, fresh or canned tomatoes and bouillon cubes. Mix and heat on high until boiling. When it boils add cooked pasta and as much reserved pasta water as needed to make it moist but not soupy. Top with grated cheese.
  5. Bake in a preheated 425-degree F oven for 10 to 12 minutes, or until bubbly and cheese is melted on top.
  6. Serve warm topped with chopped cilantro and remaining onion and crushed red pepper flakes, if desired. Enjoy!
