OMG Cinnamon Toast Crunch™ Bars Recipe Will Get Oohs & Ahhs

Wow. This deliciousness of these ooey, gooey Cinnamon Toast Crunch™ bars took me off guard. I described these bars to my daughter before I made them as Rice Krispies™ treats, just made with her favorite cereal. Wrong. These marshmallow treats are loaded with cinnamon and so ooey, gooey that you will close your eyes after your first bite and literally say one of the following: "OMG," "Ahh," "Wow," "Mmm" or "These are so good." Well, that's we we kept doing on repeat, which is where this recipe will be in my dessert rotation.

All you need to make these incredible budget-friendly cereal treats is a box of Cinnamon Toast Crunch™ cereal, butter, vanilla extract and marshmallows. I did learn a couple important things when making them that is in Recipe Notes below. Be sure to read that before preparing these bars.

Recipe Notes

  • Be sure to generously butter the bottom and sides of your baking dish and let them cool completely or you will not be able to get them out of the pan. Next time I will use parchment paper on the bottom of my baking dish. I ended up refrigerating them for about an hour before cutting, which helped the process.
  • Store the cereal treats in an airtight container with each layer separated by parchment paper (or they will stick together!).
  • The original recipe called for salt, which I omitted, and used a 9x9-inch baking pan. That would have been entirely too small. I used an 11x7-inch baking dish, but a 13x9-inch would be fine, too.

Here's how to make it: 

  1. Melt the butter in a large pot. Stir in the vanilla extract.
  2. Add the marshmallows.
  3. Cook over low heat, stirring often, until melted.
  4. Add the cereal.
  5. Stir until it is completely coated in the melted marshmallows.
  6. Spread into a 11x7-inch or 13x9-inch baking dish that's been lined with parchment paper or generously butter.
  7. Let the bars cool completely (at least 1 hour) before cutting.

I loooove Cinnamon Toast Crunch cereal! In fact, it may 😉 have been one of the things I ate, right out of the box, when my kneecap was splinted, & I wasn't allowed out of bed. This fun treat is definitely going on my "to make list ", as soon as I buy more cereal Donna John .Bet they'd be great with my maple flavored marshmallows, too!

I took some last night to my mom and she loved them. They are addictive! Honesty, I'm not sure about the maple marshmallows (never heard of them!). These are really sweet as is. My mom wants me to sprinkle more ground cinnamon on the top next time. I think they're perfect! :-)

The maple flavored marshmallows aren't any sweeter than regular marshmallows, they're just flavored maple instead of vanilla. Dusting with a bit more cinnamon sounds like a yummy idea! I think the maple flavored marshmallows are a Canadian thing, seeing as the maple leaf is front and center in our flag!
