Recipe Notes

  • Make sure to use a thin layer of the pumpkin mixture. I used a little too much and it came out the sides, making them not as pretty as they could have been!
  • These will keep for two to three days in an airtight container on your counter.
  • If you don't have a sifter, use a small colander to shake the powdered sugar on the top for a fine dusting.
  • Keep puff pastry as cold as possible until you are ready to work with it. The warmer it is, the less rise you will get.

Here's how to make it:

  1. Line a baking sheet with parchment paper. Combine pumpkin puree, sugars, vanilla, cinnamon and egg yolks in a medium bowl.
  2. Mix well.
  3. Place one sheet of puff pastry on a lightly floured surface and spread a thin layer of the pumpkin mixture on it.
  4. Cut the pastry with a knife or pizza cutter into triangles. Gently roll them up, starting with the wider edge. Place on the parchment. Repeat with the second sheet of pastry dough.
  5. Place in a preheated 375-degree F oven and bake for about 15 minutes, or until the rolls are golden brown. Remove and cool for about 5 minutes. Before serving dust with powdered sugar.
