Fall is here and so that means all things pumpkin! Enter this very easy pumpkin puff pastry dessert recipe that can be whipped up in less than 30 minutes. These sweet puff pastry rollups are light and fluffy and so delicious, you might want to make them more than once this fall season!

Ingredients
- 1 box (17 ounces) puff pastry, defrosted (2 sheets)
- 1 cup pumpkin purée
- 1/4 cup brown sugar
- 3 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons cinnamon
- 2 egg yolks
- 2 egg whites, for the glaze
- powdered sugar, for dusting

Recipe Notes
- Make sure to use a thin layer of the pumpkin mixture. I used a little too much and it came out the sides, making them not as pretty as they could have been!
- These will keep for two to three days in an airtight container on your counter.
- If you don't have a sifter, use a small colander to shake the powdered sugar on the top for a fine dusting.
- Keep puff pastry as cold as possible until you are ready to work with it. The warmer it is, the less rise you will get.
Here's how to make it:
- Line a baking sheet with parchment paper. Combine pumpkin puree, sugars, vanilla, cinnamon and egg yolks in a medium bowl.
- Mix well.
- Place one sheet of puff pastry on a lightly floured surface and spread a thin layer of the pumpkin mixture on it.
- Cut the pastry with a knife or pizza cutter into triangles. Gently roll them up, starting with the wider edge. Place on the parchment. Repeat with the second sheet of pastry dough.
- Place in a preheated 375-degree F oven and bake for about 15 minutes, or until the rolls are golden brown. Remove and cool for about 5 minutes. Before serving dust with powdered sugar.
