10-Minute Roasted Beet Hummus Is a Vibrant Appetizer or Side Dish by Elisa Schmitz
My love affair with beets continues as I explore new ways to use beets in my recipes. I usually roast my beets in the oven and serve them as a savory side dish. This time, I'm taking my obsession with beets a step further and turning those roasted beets into a flavorful hummus spread that you can serve as a flavorful appetizer or side dish. And after you've roasted the beets, the hummus takes only 10 minutes to make!
Aside from providing a pop of bright color to your menu, beets are loaded with nutrients and packed with essential vitamins, minerals and plant compounds that may help fight inflammation, improve digestion and lower blood pressure and cholesterol, among the many health benefits of beets.
If you enjoy a Mediterranean Diet as I do, this healthy hummus appetizer fits in perfectly with that healthy eating lifestyle. But even more exciting is the taste of this vegetable side dish. With chickpeas and beets as its base, this gluten-free hummus recipe also includes tahini, extra virgin olive oil, fresh lemon juice, garlic and cumin. You just blend it up then serve it with raw veggies, bread or your favorite crackers. Yum!

Ingredients
- 8 ounces roasted beets, chopped
- 1 can (15 ounces) chickpeas
- 1/4 cup extra virgin olive oil
- 1/4 cup tahini
- juice of 2 lemons (about 4 to 6 tablespoons)
- 1 clove garlic
- 1 teaspoon ground cumin
- sesame seeds, for garnish (optional)

Recipe Notes
- If you don't have fresh garlic, you can use minced garlic in a jar.
- I prefer to squeeze my own lemon juice, but in a pinch, you can use bottled lemon juice.
- You can store any leftover hummus in a container in the refrigerator for up to five days.
Here's how you make it:
- Put all the ingredients into a blender or food processor. Season with salt and pepper, to taste, if desired.
- Puree until smooth.
- Garnish with sesame seeds, if desired. Serve with your favorite raw veggies, toasted bread, bread sticks or crackers
