Beef & Chicken Teriyaki Stir Fry Recipe Is the Perfect Weeknight Dinner

Stir fry is one of our favorite weeknight dinners because it is so quick to make, and everyone loves it. Stir-fry recipes are loaded with fresh vegetables and lean proteins, making them a healthy choice for dinner. Plus, stir-fry recipes are forgiving: they work with so many different meats and vegetables. Chances are good that whatever is in your refrigerator at any given time will work in a simple stir fry. Perfect!

That’s exactly how this beef, chicken and vegetable stir-fry dinner recipe came together. Looking into my fridge to see what I could make for dinner, I found one beef filet and one chicken breast. I also had a broccoli crown, a few ounces of baby carrots, and a green and yellow bell pepper. Those ingredients added up to a stir-fry dinner that was dang delicious!

This bright and colorful Asian recipe is bathed in tasty teriyaki sauce (you can use store-bought teriyaki sauce or make your own homemade teriyaki sauce) and comes together in about 30 minutes. So easy and delicious, you’ll hope for leftovers for lunch the next day!

Ingredients

  • 1 medium beef filet, diced (tenderloin or other steak would work, too)
  • 1 medium chicken breast, diced
  • 2 tablespoons olive oil
  • 3/4 cup teriyaki sauce
  • 1 broccoli crown, chopped
  • 3 - 4 ounces baby carrots, chopped
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 teaspoon of your favorite herb seasoning blend, if desired

Here's how to make it:

  1. Warm 2 tablespoons olive oil in a large pan, wok or skillet. Place the broccoli, carrots and peppers into the skillet or wok. Sauté until crisp tender, about 5 minutes.
  2. In another pan, warm the teriyaki sauce and herb seasoning, if using. Add the beef and chicken.
  3. Sauté in the sauce until meat is cooked through, about 10 minutes. Serve over white or brown rice.
