To make this stir fry asparagus and chicken recipe you only need a short list of ingredients. Here is your shopping list for this Asian-inspired dinner: boneless chicken breasts, cooking oil, fresh asparagus, fresh garlic, fresh ginger (ready about the health benefits of ginger), chicken broth, low-sodium soy sauce (or gluten-free tamari), sesame oil and cornstarch.
Variation: Don't like asparagus? Try this recipe with green beans or broccoli. For some crunch, sprinkle the finished dish with crushed peanuts, fried shallows or crispy garlic.
This one-pan chicken recipe can be served as a complete meal, or make some quinoa, rice or noodles for it to be spooned over. The dinner is so quick and easy to prep and cook, you have time to make another side dish like snow peas, sugar snap peas, bok choy or crispy egg rolls.

Ingredients
- 1 pound boneless chicken breasts, cut into 1-inch pieces
- 1 tablespoon vegetable oil
- 1 bunch asparagus, trimmed and cut into pieces (about 1 pound)
- 3 cloves garlic, minced
- 2 teaspoons minced fresh ginger
- 3/4 cup chicken broth
- 1 tablespoon low-sodium soy sauce (or tamari)
- 2 teaspoons sesame oil
- 1 tablespoon cornstarch
Here's how to make it:
- Combine the chicken broth, soy sauce, sesame oil and cornstarch in a bowl. Set aside. (For a gluten-free dinner use tamari instead of soy sauce.)
- Heat the oil in a large skillet or wok over high heat. Sprinkle the chicken with salt and pepper, and put into the hot oil. Cook about 3 minutes per side or until browned and almost cooked through.
- Add the asparagus and cook about 3 to 4 minutes or until crisp-tender.
- Add the garlic and ginger. Cook for 30 seconds.
- Add the chicken broth mixture and cook for about 2 minutes or until sauce thickens. Serve. Store any leftovers in an airtight container in the fridge. Reheat in the microwave.
