A Crazy Magic Banana Cake Recipe You'll Go Ape Over (Moist & Delicious)

My friend Sherry is great about sharing her recipes on social media for others to enjoy. Her banana cake recipe is the one that people really go crazy for. This moist banana cake is the perfect dessert to serve any time of the year after dinner with a cup of coffee or glass of milk. The moist homemade cake also makes a wonderful sweet snack

Friends and family not only ask her for the recipe, but they even ask her to bake it for them! Luckily for all of us, she shared the easy banana cake recipe with me. To make this crazy banana cake recipe you will need overripe bananas, flour, buttermilk, butter, baking soda, lemon juice, powered sugar, granulated sugar, vanilla extract, eggs, salt, powdered sugar and cream cheese. 

This cake bakes for a longer time at a lower temperature, resulting in a crazy good, moist cake. Try it today and be sure to share with your friends and family!

Icing

  • 1/2 cup softened butter
  • 3 1/2 cups powdered sugar
  • 8 ounces cream cheese, at room temperature
  • 1 teaspoon vanilla

  • Be sure to use very ripe bananas for this recipe.
  • Love cinnamon. Sprinkle some into the cake batter and/or cake frosting.
  • Store the cake in an airtight container. 

Here's how to make it: 

  1. Preheat oven to 275 degrees F. Grease and flour a 13x9-inch baking pan.
  2. Mash bananas and mix with lemon juice. Set aside.
  3. In a medium bowl, mix flour, baking soda and salt. Set aside.
  4. In a large bowl, cream butter and sugar together. Beat eggs in one at a time. Add vanilla.
  5. Beat in flour mixture alternately with buttermilk. Stir in bananas.
  6. Pour into cake pan and bake 1 hour and 10 minutes, or until a fork comes out clean. If needed, cook longer, checking every 10 minutes until cake is fully cooked.
  7. Remove cake from oven and immediately place in freezer for 45 minutes. If not completely cool upon removal from freezer, let cool further before icing.
  8. To make the icing, cream butter and cream cheese together. Beat in vanilla and powdered sugar on low until combined, then on high until smooth. Frost cooled cake with the icing.

It says the total time is 1 1/2 hours yet it's more like 2 1/4 hours. 20min prep time, 1hr 10min bake time and 45min in the freezer.
It's annoying when a recipes the "total time" is longer than stated.
