30 minute bake time is too short - I am leaving it to bake longer. It was undercooked in the center at 30 minutes.

Every oven is different. At my first house, I had to bake it almost 10 minutes longer. The oven in my new house bakes it in 30 minutes. You just need to watch it. Thank you for pointing that out! Oxnardprof

I had 6 blackening-by-the-hour bananas sitting on the counter so I gave this one a try--sort of... She-who-can't-just-follow-a-recipe tried a few things: I used 1 cup regular flour, 1/2 cup whole wheat, 1/2 cup oat bran. I didn't have vanilla, so I used almond extract. And I had some crushed pineapple left over from the last batch of Morning Glory muffins so I put in about 1/2 cup of that (squeezed out as much liquid as I could), and since the pineapple was sweet, I backed off on the sugar and put ~1 1/4 cup. It turned out really good! It didn't rise a lot, but that may be an indication I need some new baking soda/powder. I'm looking forward to a piece with some cream cheese in the morning!

My sweet neighbor Robin brought me over a loaf today. Between me and my renter, we’ve inhaled it. Robin doubled the recipe and made four loafs to share, and she shared the recipe.
