Grandma's Banana Bread Recipe: The Absolute Best Banana Bread Ever

This easy banana bread recipe is really is the best banana bread you'll ever make. And, it's super simple. Take it from this grandma, who knows her baking. This is how to make the absolute best banana bread ever.

I'm pretty sure my delicious banana bread recipe will be one snack or dessert recipe you'll be making again and again!

Cuisine: American
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Servings: Makes 2 loaves

Ingredients

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups sugar
  • 1 egg
  • 1 1/2 teaspoons vanilla
  • 5 - 6 overripe bananas, mashed
  • 1/4 cup oil
  • 1/2 cup milk
  • 1 cup chopped nuts

Here's how you make it:

  1. Combine the flour, baking powder, baking soda and salt in a bowl.
  2. Combine the rest of the ingredients in another bowl.
  3. Mix wet and dry ingredients together.
  4. Pour into two greased and floured 9x5-inch loaf pans. Bake at 350 degrees F about 30 minutes.

Now I'll share a couple of my home chef secrets:

  • I like to slightly under bake my bread. Just where it's a tiny bit moist in the center on the top.
  • Before it's completely cool, I cover with plastic wrap. This makes the top of the bread ooey gooey and super moist.

30 minute bake time is too short - I am leaving it to bake longer. It was undercooked in the center at 30 minutes.

Every oven is different. At my first house, I had to bake it almost 10 minutes longer. The oven in my new house bakes it in 30 minutes. You just need to watch it. Thank you for pointing that out! Oxnardprof

I love a moist slightly undercooked banana bread, thanks for the tips. Will place plastic wrap over it once cooked to keep the top Gooey and scrumptious 😀😀😀

I had 6 blackening-by-the-hour bananas sitting on the counter so I gave this one a try--sort of... She-who-can't-just-follow-a-recipe tried a few things: I used 1 cup regular flour, 1/2 cup whole wheat, 1/2 cup oat bran. I didn't have vanilla, so I used almond extract. And I had some crushed pineapple left over from the last batch of Morning Glory muffins so I put in about 1/2 cup of that (squeezed out as much liquid as I could), and since the pineapple was sweet, I backed off on the sugar and put ~1 1/4 cup. It turned out really good! It didn't rise a lot, but that may be an indication I need some new baking soda/powder. I'm looking forward to a piece with some cream cheese in the morning!

Donna John, Yum!!!
My sweet neighbor Robin brought me over a loaf today. Between me and my renter, we’ve inhaled it. Robin doubled the recipe and made four loafs to share, and she shared the recipe. I have 10 bananas on my counter that have been screaming, we’re ready! I’m going to do some late night baking and include a copy of Grandma’s Recipe, and your link. I’m following….Thanks for sharing!

That makes me so happy!!! Love passing on my grandma's recipes! Josie Studer
