Hall of Fame 3-Ingredient Cheesy Baked Zucchini Casserole Recipe

When I was first learning how to cook in my early 20s, my father-in-law shared with me a simple way to cook zucchini. The zucchini casserole recipe has just three simple ingredients and super easy prep. (Just what a new cook needs or anyone who has a busy life!)

This easy baked zucchini recipe has stood the test of time. Here is your super short and simple shopping list for this zucchini recipe: fresh zucchini, a small can of tomato sauce and shredded mozzarella cheese. Those three ingredients bake up and create a side dish you'll be making over and over again.

Try this farm-to-table recipe and see what your family thinks of this cheesy side dish.

Recipe Notes

  • You could top the zucchini with grated Parmesan instead of mozzarella.
  • Grate your own cheese. Freshly grated cheese melts up better than prepacked shredded cheese.
  • Try this recipe with yellow crookneck squash.
  • You could stir some Tuscan seasoning or dried Italian seasoning into the tomato sauce.

Here's how to make it:

  1. Put the zucchini into a baking dish. Season with salt and pepper.
  2. Pour the tomato sauce over the zucchini. Toss to coat.
  3. Cover and bake in a preheated 350-degree F oven until zucchini is tender, about 20 to 30 minutes.
  4. Top with the shredded cheese. Bake another 5 minutes.

This was one of the very first things I made when I got married back in 1987. My father-in-law taught me to make it. So easy but it was gourmet to me! Hope you enjoy.
