Calling all egg bite fans! If you love egg muffins as much as I do, then this should be the next recipe you try. I typically make my egg bites recipes with cottage cheese, but this time I changed things up a bit. Ricotta cheese is one of my favorite stealth ingredients, so I decided to use it in this amazing breakfast recipe. The high-protein ricotta cheese egg bites recipe is nutritious and delicious, and makes a great addition to a healthier Mediterranean diet.

Ricotta is an Italian whey cheese that has a lighter, creamier, less chunky texture than cottage cheese. In this nourishing egg bites recipe, ricotta adds a creamy depth of flavor that makes the muffins irresistible. What could be better than that? So if you're looking for an easy way to get in more protein without sacrificing flavor, then you've got to try this delicious high-protein egg bites recipe. To whip up a batch of these tasty bites, here are the gluten-free ingredients you'll need to gather: ricotta cheese, eggs, almond flour, baking powder and garlic powder. The green onions, flaxseeds and chia seeds are optional, but provide additional flavor and nutrition (check out the health benefits of scallions, the health benefits of flaxseeds and the health benefits of chia seeds). I also sprinkled some Maldon flaky sea salt on top as a finishing touch – so good! Simply combine the ingredients, pour the mixture into muffin cups then bake the bites until they're puffed up and golden brown. I love the simplicity of this recipe, but every now and then, I also like adding whatever vegetables and/or shredded cheese I have in the fridge as well.

Ingredients
- 2 cups ricotta cheese
- 6 eggs
- 1/2 cup almond flour
- 1 teaspoon baking powder
- 1/2 teaspoon garlic powder
Optional Ingredients
- 2 tablespoons green onions, diced
- 1 teaspoon flaxseeds
- 1 teaspoon chia seeds
- 1 tablespoon flaky sea salt (or to taste)
Here's how to make it:
- In a large mixing bowl, add the ricotta cheese and eggs. Whisk to combine.
- Add the almond flour, baking powder and garlic powder. Add salt and black pepper, to taste, if desired. Whisk to combine.
- Add the scallions, flaxseeds and/or chia seeds, if using. Stir to combine.
- Evenly distribute the mixture into 12 muffin cups that have been sprayed with cooking spray or lined with baking liners.
- Sprinkle the tops with flaky sea salt, to taste, if desired.
- Bake in an oven that's been preheated to 350 degrees F until the bites are puffed up and golden brown, about 20 to 25 minutes.
- Allow the egg muffins to cool before removing from the pan and serving.
- Store leftovers in an airtight container in the refrigerator or freezer.
