I have a friend who has an aversion to cottage cheese. I think it's something about the way the curds look that makes her suspicious. I try to share cottage cheese recipes with my friend (who shall remain nameless) that I think she'll like, but it's been tough to win her over. I finally got her to try some cottage cheese in this delicious breakfast recipe and, guess what? This high-protein egg bites recipe with spinach and feta fooled her! I don't think she had any idea that she was eating cottage cheese because it melts right into the batter as it's baking (no curds to be seen or felt).

My friend knows that we need to eat more protein as we get older, so I didn't think she'd mind if I slipped her some without her knowing. Especially because this light and fluffy high-protein Mediterranean egg bites recipe with spinach and feta is delicious! The easy egg bites recipe is flexible, so you can add your favorite vegetables, if you like. For example, I included some red onion for additional flavor (and the health benefits of onions). During the busy week, these tasty egg muffins are a convenient and delicious grab-and-go-source of energy in the morning, for lunch, at snack time or anytime. This recipe is a nice addition to a healthier Mediterranean diet.
To make these gluten-free egg muffins, here are the eight wholesome ingredients you need to gather: extra virgin olive oil, red onion, fresh spinach, cottage cheese, eggs, heavy cream, garlic powder and feta cheese. You sauté the onions and spinach before evenly distributing them in the bottom of a muffin tin. Then you add the egg mixture and bake the egg bites until cooked through and golden. A simple and satisfying brunch recipe.
Serve these cheesy egg bites for breakfast or for lunch alongside some salad or fresh-cut fruit, bagels or other favorite sides. I hope they'll energize you because they're as nutritious as they are delicious!

Ingredients
- 1 tablespoon extra virgin olive oil
- 3/4 cup red onion, diced
- 5 ounces fresh baby spinach
- 8 large eggs
- 1/2 cup heavy cream
- 1/2 teaspoon garlic powder
- 1 cup cottage cheese
- 6 ounces feta cheese, crumbled
- salt and pepper, to taste (optional, but I used about 1/2 teaspoon of each)
Here's how to make it:
- In a large skillet over medium-high heat, add the olive oil and red onions. Sauté until crisp-tender, about 3 minutes. Add the spinach and sauté until it wilts, about 1 additional minute.
- Evenly distribute the mixture into a muffin pan that's been sprayed with cooking spray then set aside.
- In a large mixing bowl, add the eggs, heavy cream and garlic powder. Add salt and black pepper, to taste, if desired. Whisk to combine. Add the cottage cheese and feta cheese. Stir to combine.
- Evenly distribute the egg mixture on top of the spinach mixture in the muffin tin, being careful not to over-fill each muffin (I filled each one a bit more than three-quarters full).
- Bake in an oven that's been preheated to 350 degrees F until cooked through and golden, about 19 to 24 minutes. Allow to cool for a bit before removing from muffin tin and serving.
- Garnish with fresh parsley, if desired. Store leftovers in an airtight container in the refrigerator or freezer and reheat in the microwave.
