Ingredients
- 4 slices turkey bacon (or pork bacon)
- 1/4 cup red bell pepper, finely chopped
- 1/4 cup sundried tomatoes (drained if in oil)
- 1 small onion, finely chopped
- 2 ounces fresh spinach, chopped
- 6 large eggs
- 1/4 cup whole milk
- 1/2 teaspoon garlic powder (or to taste)
- 1/4 teaspoon smoked paprika (or to taste)
- 1/2 cup shredded mozzarella or gruyere cheese (or your favorite cheese)
Here's how to make it:
- Cook the bacon in a skillet until crisp. Remove to cool and then crumble. Set aside. (For vegetarian muffins, omit the bacon and use olive oil to cook the vegetables.)
- To the same pan, add the red bell pepper, onion and sundried tomatoes. Cook until softened, about 5 minutes. Add the spinach and cook about 2 minutes more, or until wilted. Stir in the bacon.
- Whisk together the eggs, milk, garlic powder and smoked paprika in a bowl. Season with salt and black pepper. Stir the mixture into the skillet along with the cheese.
- Fill 12 greased or lined muffin cups with about 1/4 cup of the mixture.
- Bake the eggs in a preheated 350-degree F oven for about 15 to 16 minutes, or until eggs are cooked through and set. Serve. Store the egg muffins in an airtight container in the fridge and reheat in the microwave.
