These healthy viral banana coconut cookies have become very popular on social media. I’m fairly skeptical when it comes to very limited ingredient recipes, but oh boy, this cookies recipe did not disappoint. The banana coconut cookies come together in just five minutes and are ready to satisfy your sweet tooth in under 20 minutes.
The next time you or your family is craving a sweet snack, try these healthy three-ingredient cookies. I think you’ll want to make these cookies that have no refined sugar over and over! All the ingredients in this cookies recipe are gluten-free, which is another bonus.
Here is your shopping list for these coconut banana cookies: unsweetened shredded coconut (read about the health benefits of coconut), bananas (check out the health benefits of bananas) and chocolate chips. I added pistachios to my cookies the first time I baked them. We loved them so much, I made another batch without pistachios, and they were just as delicious.

Ingredients
- 1 cup unsweetened shredded coconut
- 1 ripe banana, mashed
- 1/4 cup chocolate chips (dark, semisweet, sugar-free or milk chocolate)
- 1/3 cup pistachios, pecans or other nuts (optional)
Here's how to make it:
- Combine coconut and mashed banana in a medium bowl.
- Form into 6 cookies and place on a parchment paper-covered baking sheet.
- Bake in a preheated 350-degree F oven for 12 to 15 minutes.
- When the cookies have 2 more minutes to bake, melt your chocolate in the microwave or on the stove top. (My dark chocolate chips melted beautifully. I used semisweet chocolate and added 1 teaspoon coconut oil and about 1 tablespoon of water to make the chocolate easier to drizzle.) When the cookies come out of the oven, use a spoon to drizzle chocolate over the top.
- Let the chocolate harden a bit before serving. Store the cookies in an airtight container.
