I’m always trying to find easy cookie recipes that I can throw together when we have friends coming over or if my husband requests them. This pistachio coconut cluster cookie recipe is a version of his all-time favorites cookies and it takes me under 30 minutes, including cleanup time.
You only need four simple ingredients to make these candy-like cookies. Here is your gluten-free shopping list: pistachios, unsweetened shredded coconut, sweetened condensed milk and chocolate chips. These pistachio coconut clusters can be made with other nuts and use the chocolate that you love best. He wanted dark chocolate chips (check out the health benefits of dark chocolate), but any chocolate chips you have in the house will work just fine.

Ingredients
- 2 cups pistachios (unshelled), whole or slightly chopped
- 2 cups unsweetened shredded coconut
- 6 ounces (1/2 a can) sweetened condensed milk
- 1 cup chocolate chips (dark, semisweet, milk chocolate or a combination)
Here's how to make it:
- Line a large baking sheet with parchment paper and preheat your oven to 350 degrees F. Put all the ingredients into a mixing bowl.
- Gently fold to combine.
- Place large scoops of the batter onto the baking sheet to form your cookies. Start small and add to the cookies to make 10 to 12. (I only could fit 9 per baking sheet.)
- Bake for 12 to 15 minutes, or until the cookies are golden brown.
- Let the cookies rest on the baking sheet for a few minutes to cool. Enjoy! Store the cookies in an airtight container to keep them fresh.
