Here is your shopping list for this moist and juicy chicken recipe: boneless/skinless chicken thighs, balsamic vinegar, fresh ginger, fresh thyme or rosemary, soy sauce or tamari (tamari is gluten-free), fresh garlic, limes for juicing, butter, fresh peaches, honey, optional flaky sea salt, green onions and fresh basil.

Ingredients
Chicken and Marinade
- 5 tablespoons balsamic vinegar
- 2 tablespoons finely grated fresh ginger and any ginger juice (2-inch piece)
- 2 1/2 pounds boneless, skinless chicken thighs
- 8 fresh thyme sprigs or 4 fresh rosemary sprigs
- 3 garlic cloves, finely grated or pressed
- 2 tablespoons soy sauce or tamari
- 1 teaspoon fresh lime juice, plus more as needed
Peach Glaze
- 2 tablespoons butter, melted
- 1 tablespoon chopped fresh thyme or 2 teaspoons chopped fresh rosemary
- 4 ripe peaches, halved and pitted
- 1 teaspoon honey (optional)
- flaky sea salt (optional)
For Finishing
- 3 green onions, white and green parts, thinly sliced (optional)
- chopped fresh basil, for garnish (optional)
Recipe Notes
- If you can't find fresh peaches, use fresh nectarines.
- Use the best balsamic you can. A good balsamic makes all the difference in recipes.
- You can use low-sodium soy sauce. For a gluten-free dinner, use tamari.
- If you don't have a grill, cook the chicken and peaches under your oven broiler or in a grill pan or cast iron skillet.
Here's how to make it:
- Make the marinade for the chicken by whisking together the balsamic vinegar, ginger and a good pinch of salt. Reserve 2 tablespoons of the marinade for serving.
- Salt the chicken and place it into a large container or resealable bag. Drizzle the balsamic mixture over it. Add thyme or rosemary sprigs, garlic, soy sauce or tamari and lime juice. Cover or seal and place in the fridge for up to 2 hours or overnight.
- When you are ready to cook, preheat the grill by brushing with olive oil or turn on the oven broiler. Get the peaches ready to grill by adding all the glaze ingredients into a small bowl. Brush the halved peaches with the mixture and place on a grilling basket or directly on the grill. Grill for 2 to 4 minutes and transfer to a platter when the skin begins to curl back. Sprinkle with a bit of flaky salt, if desired, and set to the side.
- Cook the chicken at the same time with peaches if you have enough room, or after they are cooked if not. Cook chicken for about 5 minutes per side or until the internal temperature reaches 165 degrees F. Remove from grill.
- Serve the chicken with the peach slices and reserve balsamic drizzled over it. Top with green onions and basil, if desired.
