To make these decadent no-bake peanut butter bars, here are the gluten-free ingredients you'll need to gather: peanut butter, almond flour, pure maple syrup and chocolate chips. First, mix the peanut butter with the almond flour and maple syrup. Then, press the mixture into a baking pan. Next, melt the chocolate in the microwave and spread it over the peanut butter mixture. Finally, refrigerate it for about 45 minutes before bringing it back to room temperature to slice into bars. Ingredients
- 2 cups peanut butter (crunchy or creamy)
- 2 cups almond flour
- 1/2 cup pure maple syrup
- 2 1/2 cups chocolate chips (semisweet chocolate chips, dark chocolate chips or a combination)
- 3/4 cup creamy peanut butter (optional)
Here's how to make it:
- In a 13x9-inch baking pan, spread out a piece of parchment paper with a bit of overhang. In a large mixing bowl, add the peanut butter, almond flour and maple syrup. Stir to combine. (I used crunchy peanut butter, but you also could use creamy.)
- Spread the mixture onto the parchment paper and, using a large spoon, small spatula or even your clean hands, press it evenly across the bottom and into the corners, ensuring it's evenly distributed.
- In a large, microwave-safe bowl, add the chocolate chips. Microwave the chips for 30 seconds, then remove and stir. Microwave for another 30 seconds, then remove and stir again. At this point, the chocolate may be mostly melted, and you can keep stirring until all chips are completely melted. But because microwaves vary, you may need an additional 30 seconds of microwaving time. Just be sure not to cook it too long because it will continue to melt even after you remove it from the microwave. If you'd like your chocolate topping to be on the softer side, you can add 3/4 cup of creamy peanut butter to it. If yes, then now is the time. Add the 3/4 cup of peanut butter to the melted chocolate and stir until smooth. (You can use dark chocolate or semisweet chocolate chips, or a combination of the two. I did not add peanut butter because we like our chocolate layer to be firmer, like a chocolate bar.)
- Spread the melted chocolate over the peanut butter mixture.
- Ensure it's evenly distributed. It should be smooth and glossy.
- Place the pan in the refrigerator until chocolate is set, about 45 minutes.
- Allow to return to room temperature before slicing into bars. (I cut mine into 12 bars, but you could easily make 15 bars or more from this recipe.)
- Store leftover bars in an airtight container in the refrigerator or freezer. Allow to return to room temperature before serving.
