I don’t usually roast tomatoes, but this easy recipe will have them in my refrigerator as a staple from now on. I added them to a delicious Mediterranean quinoa salad, but you can add them to any salad, avocado toast, sandwich or to add some texture to tomato soup. This sweet roasted tomatoes recipe is so simple to pop into the oven. Get creative about how to use them up!

To make these healthy Mediterranean-inspired roasted cherry tomatoes you will need fresh cherry tomatoes, extra-virgin olive oil, sea salt, black pepper and optional fresh thyme. The tomatoes are seasoned with the salt and black pepper, then drizzled with the olive oil. Bake for about two to three hours and you have tasty gluten-free tomatoes with a concentrated tomato flavor that are fantastic! Not only that, you'll get the health benefits of tomatoes and the health benefits of olive oil.

• 3 cups cherry tomatoes, halved if they are large
• extra virgin olive oil

Recipe Notes

• You can accelerate the process by turning the oven up to 325 to 350 degrees F about an hour into the cooking. You don’t want to start on the higher heat because the tomatoes will burst.

• Store the roasted tomatoes in an airtight container or mason jar in the fridge.

Here's how to make it: 

1. Line a large baking sheet with parchment paper and preheat the oven to 250 degrees F. Put the tomatoes, cut side up, onto the parchment and drizzle with olive oil. Add a few pinches of sea salt and a few grounds of fresh black pepper. Move the tomatoes around to get the olive oil on them.
2. Place into the oven and bake for 2 to 3 hours until they are nice and cooked around the edges.
3. Top with optional fresh thyme, if desired.
