Ingredients
- 1 cup flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- dash of salt
- 3/4 cup milk or nut milk
- 2 tablespoons melted butter
- 1 1/2 teaspoons vanilla
- 1 egg
- butter, for cooking
Toppings
- maple syrup
- flaked coconut
- fresh fruit
- honey
- yogurt
Here's how to make it:
- Combine the flour, sugar, baking powder and salt in a bowl. Whisk together.
- Add the milk, butter, vanilla and egg. Whisk until smooth. Let the batter rest for 5 minutes.
- Put the batter into a plastic condiment bottle or a plastic food storage bag (cut the tip off to create a piping bag).
- Melt a little butter in a nonstick pan. Squeeze tiny pancakes into the hot butter. Cook until bubbles form then flip and cook until pancakes are cooked through, about 2 minutes. Repeat with remaining batter. Remove to a plate. Serve in a bowl with desired toppings.
