This Trader Joe's lentil flatbread recipe is made with all pre-made Trader Joe's items, but if you don’t live near a Trader Joe's, don’t despair, this nutritious recipe can be made with any brand premade bruschetta, flatbread and seasoned lentils. Be creative and let this easy recipe be your guide.
Here is your shopping list for this easy lentil recipe that went viral: Trader Joe's steamed lentils, bruschetta topping and flatbread, dried oregano and mozzarella cheese. The flatbreads bake up in about 12 minutes.
Serve these healthy flatbread pizzas for lunch or dinner with your favorite side dishes. The lentil flatbreads would also be delicious as an appetizer or healthy high-fiber, high-protein snack during the day.

Ingredients
- 17.63 ounces (1 bag) Trader Joe's steamed lentils (about 4 cups cooked)
- 14.5 ounces (1 container) Trader Joe's bruschetta (or your favorite bruschetta topping)
- 2 teaspoons dried oregano
- 4 pieces Trader Joe’s homemade flatbread
- 1 cup grated mozzarella cheese
- basil leaves, for garnish (optional)
Here's how to make it:
- Mix lentils, bruschetta and oregano in a medium bowl.
- Place the flatbread on a parchment paper-lined baking sheet. Spread about 1/3 to 1/2 cup lentil mixture over the top of each of your flatbreads. (Make sure not to overload it and don’t get too close to the edges to avoid it spilling it off of the flatbread.)
- Sprinkle the lentils with the grated cheese.
- Bake in a preheated 400-degree F oven for about 12 minutes, or until the cheese and flatbread are crispy. Remove from oven, sprinkle with a little fresh basil, if desired and enjoy! Store any leftover flatbreads covered in the fridge and reheat as desired.
