I have been making (and obsessed with) my sunflower seed cookie recipe for a long time now, and have never tried the discontinued Soft-Baked Sunflower Butter Cookies With Roasted Sunflower Seeds from Trader Joe's. If you're one of the people that are still upset by them not being sold anymore, this is the cookie recipe for you. And my sunflower seed cookies are rolled in sunflower seeds before baking. I'm calling a win here (or at least a tie).
To make these soft sunflower seed cookies you need just a short list of simple ingredients. Here is your shopping list: flour, salt, baking soda, sunflower seed butter, brown sugar, milk (regular or plant-based), vanilla extract, an egg and shelled sunflower seeds. If you've never tried sunflower seed butter, it is delicious. The nut-free spread is made with ground sunflower seeds and is a wonderful alternative to peanut butter and other nut butters. Ingredients
- 1 3/4 cup flour
- dash of salt
- 3/4 teaspoon baking soda
- 1 stick (8 tablespoons) butter, softened
- 3/4 cup sunflower seed butter
- 1 1/4 cups brown sugar, packed
- 3 tablespoons milk or nut milk
- 1 tablespoon vanilla
- 1 egg
- 1/3 cup shelled sunflower seeds
Here's how to make it:
- Combine the flour, salt and baking soda.
- In another bowl, combine the butter, sunflower seed butter, brown sugar, milk, vanilla and egg. Add the wet ingredients to the dry ingredients.
- Place round tablespoons full on cookie sheets. Use a fork to gently press to flatten. Sprinkle with the sunflower seeds.
- Bake in a preheated 350-degree F oven for about 7 to 8 minutes or until they begin to turn light brown. Store the cookies in an airtight container to keep them fresh.
