This easy hot chocolate cookie recipe was part of my Christmas cookie tray this year. Several family members said it was the best cookie they've ever eaten. This one-bowl cookie recipe is so simple to prep and bake, and is officially the cookie of winter.
To make this chewy hot chocolate cookie recipe you will need to gather the following ingredients from your fridge and pantry: butter, granulated sugar, an egg, vanilla extract, all-purpose flour, cocoa powder, baking soda, salt, chocolate chunks and mini marshmallows. If you're taking them to a holiday get-together, you can make them more festive with colorful sprinkles.
This chocolate cookie recipe with mini marshmallows is not only a wonderful addition to your winter holiday dessert table, but they make a sweet snack or dessert year-round. Maybe with a cup of hot chocolate?

Ingredients
- 1/2 cup butter
- 1 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup chocolate chunks
- mini marshmallows
- sprinkles (optional)
Here's how to make it:
- Cream together the butter and sugar.
- Add the egg and vanilla.
- Stir in the flour, cocoa powder, baking soda and salt.
- Fold in the chocolate chunks.
- Scoop the dough into balls. (I got 12 balls.) Flatten the cookies slightly, then press two to three marshmallows on top. Top with sprinkles, if using.
- Bake in a preheated 350-degree F oven for 9 to 10 minutes. Remove and cool. Store the cookies in an airtight container to keep them fresh.
