You may have seen these high-protein peanut butter cup cottage cheese balls on social media. My husband will tell you that they are worthy of the hype, even if the protein balls are a bit messy to eat! To make this high-protein recipe, you will need just four simple ingredients (five if you add my secret ingredient for even more deliciousness). Here is your short, sweet, gluten-free shopping list: peanut butter, cottage cheese, maple syrup and chocolate chips (semisweet or dark chocolate). The flaky sea salt is my optional secret ingredient. The ingredients are blended together, formed into balls, frozen then dipped in melted chocolate. Wow!
These creamy peanut butter and chocolate snacks are the perfect way to get in some extra protein during the day (check out the health benefits of protein). Serve them as a sweet bite any time or as a quick and easy dessert after just about any dinner.

Ingredients
- 1 cup peanut butter
- 1 cup cottage cheese
- 2 tablespoons maple syrup (if you use sweetened peanut butter, you might want to leave this out)
- 1 1/2 cups chocolate chips (semisweet or dark chocolate)
- flaky sea salt (optional)
Here's how to make it:
- Mix the peanut butter, cottage cheese and maple syrup, if using, in a high-speed blender or food processor. Blend for about 1 minute, until everything is incorporated.
- Make balls and place them onto a parchment paper-lined baking sheet and pop it into the freezer for an hour.
- Before removing the balls from the freezer, melt the chocolate in the microwave for 1 to 2 minutes in 30-second intervals. Use a spoon to stir.
- Cover the peanut butter balls with the chocolate by placing them in the melted chocolate or drizzling the chocolate over the top and spreading it with a spoon.
- Sprinkle with flaky sea salt, if desired. Let the chocolate set to harden. Enjoy immediately or place into the refrigerator to chill. Store the balls in an airtight container in the fridge.
