Cuisine: American
Prep Time: 10 minutes plus 1 hour to chill
Cook Time: 2 minutes
Total Time: 1 hour and 12 minutes
Servings: 9
Ingredients
Peanut Butter Base
- 1 cup creamy peanut butter
- 1 cup almond flour (or substitute 3/4 cup gluten-free flour)
- 1/4 cup pure maple syrup
Chocolate Layer
- 1 cup chocolate chips (dark or semisweet or a combination)
- 1/2 cup creamy peanut butter (it works best with just creamy peanut butter with only peanuts and salt)
Here's how to make it:
- Place a piece of parchment paper on top of an 8x8-inch pan. In a medium mixing bowl stir the peanut butter layer ingredients together.
- Place on top of the parchment paper and use clean damp hands or a spatula to press the mixture into the pan.
- Make the chocolate layer by melting the chocolate in 30-second intervals in the microwave until melted. Add the melted chocolate to the 1/2 cup of creamy peanut butter until smooth.
- Spread the chocolate over the peanut butter layer. Place the pan in the refrigerator for at least 1 hour or cover and leave in fridge for up to one week. (You can also freeze for up to one month.)
- Slice into 9 bars. (You could cut them into smaller squares, if desired.)
- When ready to serve, bring the bars to room temperature. Enjoy! Store the bars in the fridge in an airtight container or covered with plastic wrap.
