I really like having ready to go dishes that are easy to make or reheat. This cheesy grits casserole recipe is creamy and filling, and is so easy to make on a meal-prep day. To make this vegetarian casserole recipe you will need just eight simple ingredients (and two of those are salt and pepper!). Here's your short gluten-free shopping list: milk, butter, quick-cooking grits, an egg, sharp cheddar cheese, Parmesan cheese, salt and black pepper. If you don’t like or have grits, this recipe also works well with oats. Just blend them to a coarse flour in a high-speed blender and follow all the directions in exactly the same manner.

Ingredients
- 4 cups milk
- 1/4 cup butter
- 1 cup uncooked quick-cooking grits
- 1 large egg, lightly beaten
- 8 ounces shredded sharp cheddar cheese
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper (or to taste)
- 1/4 cup grated Parmesan cheese
Here's how to make it:
- Pour the milk into a saucepan and place it over medium-high heat. Bring the milk to a simmer.
- Add the grits and butter. Reduce heat to low and simmer for 5 to 7 minutes, stirring often with a whisk. Remove from heat.
- Add the egg, cheddar cheese, salt and pepper to the milk and stir.
- Pour the mixture into a greased 11x7-inch baking dish. Sprinkle with the Parmesan.
- Bake in a preheated 350-degree F oven for 35 to 40 minutes, or until the casserole is slightly firm in the middle.
- Serve warm and enjoy! Store the grits casserole covered in the fridge and reheat in the microwave.
