I get a bit tired of my usual go-to vegetable sides dishes, so I decided to try a new one today. We just loved it. These roasted brussels sprouts with garlic are so easy to make. All you need to do is brown them on the stovetop then pop them into the oven to finish their cook time. The brussels sprouts turn out beautifully brown and tender. If you like, you can add a bit of sweetness by drizzling them with a good balsamic vinegar or balsamic glaze.
To make this roasted brussels sprouts recipe, you will need just three (three!) ingredients. Here is your short shopping list: fresh brussels sprouts, extra-virgin olive oil and fresh garlic. If you want to add the balsamic, grab a bottle of that, too.

Ingredients
- 1 pound (approximately) brussels sprouts, washed and cut in half
- 4 - 6 tablespoons extra virgin olive oil, to coat bottom of pan
- 6 whole cloves garlic, peeled
Optional Ingredients
Here's how to make it:
- Preheat the oven to 400 degrees F. Place a large oven-safe skillet or cast iron pan on the cook top over medium-high heat. Add enough olive oil to cover the bottom of the pan. After the oil heats for 1 to 2 minutes, gently add the brussels sprouts, cut side down, to the pan and place the garlic cloves in between. Sprinkle with salt and pepper. Cook for 3 to 4 minutes, or until the bottoms are browned. You do not need to stir the brussels sprouts while they are browning.
- Place the whole pan inside the preheated oven.
- Bake the brussels sprouts for 15 to 20 minutes, stirring every 5 minutes, until the brussels sprouts are nice and brown. Remove from the oven.
- Transfer to a serving dish. Taste to see if more salt and pepper is needed and drizzle with a good balsamic vinegar or glaze, if desired. Store any leftover brussels sprouts in an airtight container in the fridge and reheat in the microwave.
