Here are the gluten-free ingredients you need to make this delicious vegetarian dip: ricotta cheese, Parmesan cheese, mozzarella cheese, extra virgin olive oil, an egg, lemon zest and juice, fresh dill and fresh parsley. You mix up the ingredients, pop them into a casserole dish then bake until it's golden brown. So easy!

Ingredients
- 2 cups ricotta cheese
- 1/2 cup shredded Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons extra virgin olive oil
- 1 large egg, at room temperature
- 1 small lemon, juiced and zested (use only 1 1/2 teaspoons of lemon juice and about 1 tablespoon of lemon zest)
- 1/2 teaspoon fresh dill, chopped
- 2 teaspoons fresh parsley, chopped (plus additional for optional garnish, if desired)
Recipe Notes
- I used a small Le Creuset casserole dish that measures 7x6 inches.
- If you like a little heat, you can add a sprinkle of crushed red pepper flakes.
- Store leftover dip in an airtight container in the refrigerator. Reheat in the microwave.
Here's how to make it:
- In a large mixing bowl, add all of the ingredients. Season with sea salt and black pepper, to taste, if desired. Stir to combine.
- Pour the mixture into a small casserole dish or baking pan (see Recipe Notes) that's been sprayed with cooking spray.
- Bake in a preheated 375 degrees F oven for about 15 to 20 minutes, or until top is golden brown and bubbling.
- Remove from oven and allow to cool for a few minutes. Garnish with additional fresh parsley, if desired, and serve.
