To make this flavorful high-protein bread recipe, you'll need the following ingredients: extra virgin olive oil, broccoli, onion, garlic, eggs, plain Greek yogurt, flour, baking powder, salt, Parmesan cheese and cheddar cheese. You sauté the broccoli, onions and garlic then mix the vegetables into the cheesy batter. You bake the yummy loaf until it's a lovely golden brown.

Ingredients
- 2 tablespoons plus 1/4 cup extra virgin olive oil (divided)
- 2 cups fresh broccoli, chopped
- 1/2 cup onions, diced
- 1 1/2 teaspoons minced garlic
- 2 eggs, lightly beaten
- 3/4 cup low-fat plain Greek yogurt
- 1 1/2 cups flour (all-purpose or gluten-free flour)
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup shredded Parmesan cheese
- 1 1/2 cups shredded cheddar cheese
Here's how to make it:
- In a large skillet or sauté pan with sides, heat 2 tablespoons of olive oil on medium-high heat. Add the broccoli, onions and garlic. Sauté until crisp-tender, about 4 to 5 minutes. Remove from heat.
- In a large mixing bowl, add the eggs, 1/4 cup olive oil and Greek yogurt. Whisk to blend.
- Add the flour, baking powder, salt, Parmesan and cheddar. Add black pepper, to taste, if desired. Mix well to combine. (You can use all-purpose flour or gluten-free flour. I used GF 1:1 flour.)
- Add the broccoli mixture. Stir to combine.
- Evenly spread the batter into an 8x4-inch loaf pan that's been lined with parchment paper.
- Bake at 350 degrees F for about 50 to 60 minutes, or until bread passes the toothpick test. (If the loaf is getting too brown on top, you can cover it loosely with aluminum foil.)
- Allow loaf to cool to room temperature before slicing and serving. Enjoy!
- Store the bread in an airtight container. This bread is extra delicious when toasted.
