This simple bread recipe comes together in about 15 minutes, then it bakes up into a hearty loaf that works perfectly as a vegetarian side dish or an energizing snack that you will want to enjoy just about any time of day. To make this flavorful Mediterranean recipe, you will need the following ingredients: extra virgin olive oil, onion, garlic, eggs, plain Greek yogurt, flour, baking powder, salt, Parmesan cheese, sundried tomatoes and fresh basil. You sauté the onions and garlic then mix the vegetables into the batter. You bake the loaf until it's crusty and golden.
Serve this amazing Mediterranean bread as a vegetable side dish with any dinner, as a savory snack or even for breakfast or for brunch. We enjoyed it toasted with butter, and even served it with bleu cheese and tomatoes for lunch. So delicious!

Ingredients
- 1 tablespoon plus 1/4 cup extra virgin olive oil (divided)
- 1/2 cup onions, diced
- 1 teaspoon minced garlic
- 2 eggs, lightly beaten
- 3/4 cup low-fat plain Greek yogurt
- 1 1/2 cups flour (all-purpose or gluten-free flour)
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup shredded Parmesan cheese
- 1/2 cup sundried tomatoes, drained and diced
- 2 tablespoons fresh basil, diced
Here's how to make it:
- In a skillet or sauté pan, heat 1 tablespoon of olive oil on medium-high heat. Add the onions and garlic. Sauté until crisp-tender, about 3 minutes. Remove from heat.
- In a large mixing bowl, add the eggs, 1/4 cup olive oil and Greek yogurt. Whisk to blend.
- Add the flour, baking powder and salt. Add black pepper, to taste, if desired. Mix well to combine. (You can use all-purpose flour or gluten-free flour. I used GF 1:1 flour.)
- Add the Parmesan, sundried tomatoes, basil and the onion mixture. Stir to combine.
- Evenly spread the batter into an 8x4-inch loaf pan that's been lined with parchment paper.
- Bake at 350 degrees F for about 50 to 60 minutes, or until bread passes the toothpick test. (If the loaf is getting too brown on top, you can cover it with aluminum foil.)
- Allow loaf to cool to room temperature before slicing and serving. Garnish with additional basil, if desired. Store the bread in an airtight container. This bread is extra delicious when toasted.
