My family loves pancakes. This easy grain-free pancake recipe is one of our favorite breakfasts, and only has three ingredients and no refined sugar. These gluten-free pancakes have the same consistency as a grain-based pancake and they are so yummy.

Ingredients
- 2 bananas
- 2 tablespoons peanut butter
- 2 eggs
Here's how you make it:
- Mash banana, peanut butter and eggs in a bowl until mixed to consistency of pancake batter.
- Heat 1 tablespoon coconut oil in griddle or skillet over medium high heat. Pour 1/4 cup batter onto the griddle. Brown on both sides and serve hot. Serve with your favorite topping.
